Add sugar to lukewarm water and stir to dissolve. Sprinkle yeast on water - DO NOT STIR (let the part floating on the surface fall down) and let it hydrate for about fifteen minutes. That will activate it. It is ready when bubbles appear on the surface.
Place all other ingredients in a bowl and stir and add the hydrated yeast. Knead by hand as long as you can, and mix with a mixer for 10-15 minutes.
Allow the dough to rise for 2 hours. Knead it and shape it into 2 larger balls or 6 smaller ones - if you are making pizzetas. Roll out or stretch with your hand in a circle. Place the stuffing as desired (except cooked ham and buratta). Bake at 200 degrees for 15 minutes on a preheated pan/baking tray/stone.
After the pizza is done, add cooked ham and burrata.
