Dissolve the yeast and sugar or honey in a glass of warm water and pour the mixture into the flour. Add 3 tablespoons of extra virgin olive oil, salt and remaining water and knead for at least 7 minutes, until you get an elastic, smooth and soft dough.
Form the dough into a ball, place in a floured bowl and leave to rise covered with cling film or a damp cloth for about 15 minutes in a warm place. Then shape the dough into a loaf (one or more) and fill one or two rectangular tins brushed with oil. Cover with cling film or a damp cloth and let it rise for about 2 hours in a warm place until the dough doubles in size.
Bake in a preheated oven at 180°C for 30 minutes.
Allow the bread to cool well before cutting.
