In a bowl, mix together the fine and coarse flour, salt and chopped butter. Add cold water and knead the dough. Flatten the dough, wrap in cling film and let it rest for an hour in the refrigerator.
Preheat the oven to 180°C. Chop the seasonal fruit as desired. Spread the dough in a circle, to a thickness of about 1-2 cm, transfer it to a baking paper, and then add chopped seasonal vegetables to it (be sure to leave a few centimetres along the edge). Fold the dough and transfer the galette to the oven.
Bake for about 30 minutes, or until browned
