In a bowl, mix yeast and a tablespoon of sugar. Add 100 ml milk and mix all the ingredients well and leave for 15 minutes for the yeast to rise. Melt the butter or margarine and add the remaining milk, melted butter, prepared yeast, a pinch of salt and sugar to the mixing bowl. Add half of the flour to the mixture, mix, then add the other half. Cover the container with cling film and leave it for 30 minutes to rise.
In a bowl, mix butter, sugar and cinnamon, and divide the filling into three equal parts. Divide the dough into three equal parts and roll it on a floured surface into a rectangle about half a centimetre thick. Apply the filling evenly to the entire surface of the dough and roll it up. Cut the loaf into 2 cm thick slices and place the sliced rolls in a muffin mould.
Coat the rolls with egg and sprinkle with granulated sugar. Bake the rolls in a preheated oven at 240°C for 10 minutes.
